Is it the models responsibility? As a sole trader can you just pay and not worry? How does this change if I need to become Ltd company?
If they are not from an agency, ie freelance - how would this differ? Is there anything else to consider?

Models are usually paid through the agency all you need to do is pay the invoice to the agency. Freelance models are treated as self employed for your purposes, pay them as normal but make sure to get a receipt so you can prove the payments to the tax people. The situation is the same for sole trader or limited company. The only time things change is if a model becomes a permanent employee of yours then you have to follow the rules for tax,N.I, holidays etc...
